This is one of my favorite, easy go to meals b/c I almost always keep frozen chopped ham or smoked sausage in the freezer. I do use low sodium/low fat soup as well as 2%milk cheese and it tastes great.
HAM AND POTATO CASSEROLE
2 lbs. Southern style frozen hash brown potatoes, thawed
1 can cream of chicken soup
1/2 c. melted butter
16 oz. sour cream
2 c. cubed ham
1/2 tsp. pepper
1/3 c. chopped onion
1 1/2 c. shredded Cheddar cheese
1/4 c. butter, melted
Combine all casserole ingredients and mix well. Place in casserole dish. Combine topping ingredients; sprinkle on casserole. Bake at 350 degrees for 1 hour.
